Cast iron grill pan - the bigger the better. Within reason
I've got to buy a new one , while I was refitting the kitchen I bought an induction ring from ikea £35 , recommended
Put the pan on no 9 to get the oil smoking , it gets really hot really quick , so hot there was a bang and the pan split in half , oops
