As the basics are now firmed up, some details need attention; extras you will need for European driving, given most if not all are going to be returning through France they have the greatest list of daft things.
Bulb set
First aid kit
Triangle
2 x Froggy approved breathalysers
Fluorescent vest for each occupant of the car (in the car not the boot)
Lamp adapters (not needed for HID's)
GB badge or rear numberplate
Also suggest toll tags (there are some toll motorways in Spain) worth signing up for the service.

Having been stopped a number of times, I've never been asked to show floro jackets, breathalysers, or bulbs. They're usually more interested in the reason that they stopped you.
I know it's better to be safe than sorry, but don't cancel your trip if you are missing a bulb kit.
As mentioned previously, I've been stopped with no docs, no licence, and certainly no jackets or bulbs. And they weren't all that bothered.
Bottom line is, don't do anything daft and you won't get pulled. If you do get pulled be compliant and polite, even if they're flexing their muscles. If they fine you, just pay and be on your way.
Follow these points and it'll be quick and relatively painless... unless you're doing more than 120 mph, then it gets a bit messy.
