Lambdas and the modern ECU sensor system, in a nutshell:
Exhaust gasses are monitored on both pre and post cat sides via Lambda or O2 sensors.
These determin how the engine is running with the information being fed back to the ECU and the fuelling and timing are adjusted accordingly to get the engine to run to its leanest/optimum state.
Removing one or both of the cats means that the Lambda sensors get confused as basically there is no noticeable difference in the pre and post cat readings and it throws an error.
