I had exactly the same problem with my 4200 spyder. A new thermostat should see you up to about 84*C with or without the heater on.

In that case, yours should read about 184*F.
longe drive out around Ullswater and temperature one marker below horizontal (would be 85) when running. The Thermostat clearly not working as short journeys never get to operating temperature. One for the "sunny day list".

If the temp needle goes straight up when ticking over for long periods, then settles down to 75*(ish)when driving but drops when you put the heater on, it’s likely that the thermostat is stuck open. They are easy enough to change but can be a bit fiddly.

It's always worth plugging in an obd2 reader and seeing what the actual temperature sensor is indicating rather than the gauge on the dashboard.
