I can remember a while ago being "in charge" of the bill for a big group. Having asked for everybody to be honest and give me the value of their meals and drinks including tips. I had to put in an extra $100 to cover the missing money. My advice is make every couple pay their own bill, it's not always that people are dishonest it's often that they just forget how much they have had to drink!
Most restaurants worth their salt can cope with separate bills.
