I'd strongly recommend glass out and trim off - just masking off can leave visible edges, making the paint job cheapen rather than improv the car. It'll cost a little more, but mean the whole job is that much better.
I recently had a respray on my Porsche 951 and decided not to go glass-out. Big mistake. Although the paintwork itself is perfectly good, the end result simply isn't satisfying. So now I'm thinking I'll have it done all over again, but to a deeper more expensive level. Pay properly once, not cheaply once and then properly!
Hmm. Interesting point. It needs a new windscreen for preference, and new side windows. I shall see what the war chest looks like next year.
